Cream of Wheat: Sweet or Salty?

Danny really doesn’t like oatmeal. He says it’s a texture thing. Unfortunately, I can’t imagine not having oatmeal in my life (I mean… come on! It’s so healthy and delicious… am I right?!). I tried buying some steel cut oats thinking maybe that would help with the texture issue. He will eat it, but he’s still not a big fan. So cream of wheat is a nice sort-of substitute for us. I know, it’s not the same, but equally delicious. As long as it’s not instant. That stuff is weird. Back in our beginning days, Danny was sweet one morning and made us some cream of wheat for breakfast. I took one bite and wasn’t sure what I had just put in my mouth. I made a face. He looked at me funny. It was salty! I’m sure I said something along the lines of “Who in their right mind puts salt in their cream of wheat!?” and/or “What did you accidentally put in this cream of wheat?!” but then I soon learned that he meant to …

Sunday Sew Love: 21 December & A Green Smoothie Goal

It is Sunday, right? Ah, I’m so excited to get back to work. It’s been fun, but those bills are not going to start paying themselves :/ So today’s blogmas prompt is a healthy holiday treat… which is good timing because I need to start thinking about healthy, well, anything. I’ve not been eating very well lately partially because I’ve been sick for the past week, but partially because I just need to get back in the habit of cooking for myself. I always say it’s hard cooking for two people. It is, but that’s no excuse not to do it, right!? Plus I work in healthcare… I should be setting the example! Seriously. No excuses. So anyway, my dad (the one with the awesome garden!) makes amazing green smoothies. He has a green smoothie every day for breakfast and always offers them to anyone who comes by. lol I even had one delivered to me the other day when I was feeling terrible (perks of living close to your parents, I guess). :) So …

Cooookies

Yes, I’m feeling a bit cookie monster-ish today. Or maybe it’s just the significant sugar high I have going right now. :/ So without further ado, since I have a crazy sweet tooth and can’t possibly choose a favorite… here’s Danny’s favorite Christmas cookie recipe! Butternut balls! I’ve also heard them called snowball cookies or wedding cookies. 1 cup margarine, softened 1/2 cup sifted powdered sugar (doesn’t have to be sifted) 1/2 teaspoon salt 2 teaspoons vanilla extract 2 cups all purpose flour 1 cup finely chopped nuts (we use pecans) Powdered sugar Cream margarine and sugar until light and fluffy. Add salt, vanilla, and flour, mixing well. Stir in pecans. Shape dough into balls, and place on ungreased cookie sheet. Bake at 375 for 10-12 minutes or until very lightly browned. Roll each in powdered sugar while warm. Yield: 3 dozen balls. Super easy! Haha… I say that, but all I did was watch Danny make them! :) He has made 3 batches already. PiYo Week 2 Recap & CFD Clean-Up

Under normal circumstances, I really am a fairly healthy eater. Not super healthy all the time for sure, but not too bad. BUT, for some reason whenever I attempt to follow a food plan of any kind (for instance the PiYo food plan…) all of a sudden my brain says to me, “don’t you tell me what to eat… bring on the brownies for dinner!” :/ So we won’t get into how my food plan has been going. Tomorrow is always a new day :) Side note: you must try this recipe for White Chicken Chili… it’s amazing, and I’m pretty sure at least semi-healthy. I made it last week, not this week… again… not talking about what I ate this week. :/ Also missed two of my PiYo workouts this week… and didn’t run at all. :/ So maybe not the best week ever… but I did get my replacement disc so I was able to do the Upper Body workout. AND… I cleaned up the stands at Frontier Days three days this week. Sunday was …

Happy 4th of July!

Happy Independence Day! Patriotic fruit pizza was a great way to celebrate – made this for our work BBQ yesterday. It was a pinterest inspiration success. Used a sugar cookie base, mixed cream cheese with powdered sugar and melted marshmallows for the middle layer, and found some deliciously fresh berries to top it off. Almost looks healthy, even though it’s not :) Also made peanut butter chocolate bars (one of my favorites!) and sangria (mmm…). If I were ever to make a list of the things these people are good at other than pharmacy… eating would definitely be at the top of the list :) Oh, and I’ve decided sangria is the perfect solution to wines you’re not a huge fan of. I had two open bottles of white wine in the fridge that neither of us liked enough to finish. But… mix them together, toss in some  fruit, let it sit… and you have a delicious drink no matter what the wine tasted like before. Win!
