Yes, I’m feeling a bit cookie monster-ish today. Or maybe it’s just the significant sugar high I have going right now. :/ So without further ado, since I have a crazy sweet tooth and can’t possibly choose a favorite… here’s Danny’s favorite Christmas cookie recipe!

Butternut balls! I’ve also heard them called snowball cookies or wedding cookies.

  • 1 cup margarine, softened
  • 1/2 cup sifted powdered sugar (doesn’t have to be sifted)
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 1 cup finely chopped nuts (we use pecans)
  • Powdered sugar

Cream margarine and sugar until light and fluffy. Add salt, vanilla, and flour, mixing well. Stir in pecans. Shape dough into balls, and place on ungreased cookie sheet. Bake at 375 for 10-12 minutes or until very lightly browned. Roll each in powdered sugar while warm. Yield: 3 dozen balls.

Super easy! Haha… I say that, but all I did was watch Danny make them! :) He has made 3 batches already. He made the first batch yesterday while I was making peanut butter bars and puppy chow, and he made two more today (pictured above) :) Don’t worry… we aren’t eating all of them! I’ve already given a bunch away and plan to give more away soon (that is, if there are any left…) ;)

Speaking of which, I called it baking day yesterday, but technically I didn’t do any baking. I use the peanut butter bar recipe below (excerpted from the family cookbook I made last year).

Mmmm… also delicious and easy. Oh, and as you can see I always make my puppy chow with Honeycomb… it’s much better than Chex… personal opinion :)

Until next time,
