Yes, I’m feeling a bit cookie monster-ish today. Or maybe it’s just the significant sugar high I have going right now. :/ So without further ado, since I have a crazy sweet tooth and can’t possibly choose a favorite… here’s Danny’s favorite Christmas cookie recipe! Butternut balls! I’ve also heard them called snowball cookies or wedding cookies. 1 cup margarine, softened 1/2 cup sifted powdered sugar (doesn’t have to be sifted) 1/2 teaspoon salt 2 teaspoons vanilla extract 2 cups all purpose flour 1 cup finely chopped nuts (we use pecans) Powdered sugar Cream margarine and sugar until light and fluffy. Add salt, vanilla, and flour, mixing well. Stir in pecans. Shape dough into balls, and place on ungreased cookie sheet. Bake at 375 for 10-12 minutes or until very lightly browned. Roll each in powdered sugar while warm. Yield: 3 dozen balls. Super easy! Haha… I say that, but all I did was watch Danny make them! :) He has made 3 batches already.
